For a week , as my grandfather was hospitalized. Thank God everything is ok. I cook every day. I didn’t know what to cook, but the idea came to me yesterday. This soup is very tasty ,not fat and at the same time useful. Grandpa happy! Bon appetite!

This soup is decadently creamy without the heavy cream! It relies on pureed potatoes for the creamy texture, and the sharp cheddar gives it such an unexpected bite! All in all, it's a very filling soup without being filling on the calories!

I needed to use up some frozen turkey I had in the freezer so I started to make a simple turkey soup:
I put some:
Olive Oil
in my soup pot and then threw in:
2 onions, diced
2 ribs of celery, diced
2 carrots, cut into rounds
